Ich mache meistens sowas:
server {
listen 80;
server_name _;
location /.well-known/acme-challenge {
default_type "text/plain";
alias /var/www/acme;
}
location / {
return 301 https://$host$request_uri;
}
}
Lässt sich noch mit nem try_files für ACME erweitern, dann kann man Challenges auch an andere Hosts weiterleiten, dann kriegen die auch Certs.

@milan Ich empfehle $host statt $server_name im https redirect, dann fängt das alle Hostnames ab, auf denen gelauscht wird. Dann kann man sogar einen generischen vhost auf port 80 lauschen lassen.
