Chris RuppelDoctor Funk by Donn Beach ½ oz lemon juice ½ oz lime juice ¼ oz grenadine ½ oz demerara syrup ¼ oz absinthe 2¼ oz Black Pot Still Rum 1 oz seltzer Garnish: pineapple frond Method: Combine all ingredients with ice, shake or flash blend, open pour. This one is one of my favorite tiki drinks. This version is from the Smuggler's Cove book, page 266. In it Martin Cate emphasizes that a funky Jamaican rum is needed to stand up to the hearty dose of absinthe. Jamaicans are far and away my favorite rums so this one always hits the spot for me. Pictured in the background is Hamilton's black pot still, which is the specific rum called for in this drink.
